The author presents information on the food habits, changing tastes and nutrition on the Overland Trail and in the mining camps. The author examined the social history of good on the western mining frontier. The West was won on soda-raised biscuit, bacon fried in pan, and beans both the "scratch" variety and the kind that came in cans. But some of the miners were sophiticated and ingenious in arranging to have foods such as oysters, glantines truffles, champagne, and strawberries rushed across the high desert to grace their dinner tables.
